A spicy pineapple mango paloma with a chili salt rim on a picnic blanket, next to a bottle of Pineapple Mango Habanero Margarita Mix.

Pineapple Mango Habanero Spicy Paloma

The mixer is the sweetener here, not an extra splash at the end. Three quarters of an ounce shaken with tequila, fresh grapefruit and lime gives the drink a tropical center while keeping the citrus sharp. Grapefruit soda stretches it without washing out the pineapple or mango.

Pineapple Mango Habanero Margarita Mix is the bottle. Bright pineapple lands first, mango fills the middle, and a clean citrus lift gives way to habanero heat that stays on the back of the sip.

Shake everything except the soda until the tin turns cold, then strain and top. The mixer needs that hard shake to settle into the grapefruit. Add the soda last and stir once, gently, or the drink goes flat before it reaches the table.

How hot is it The finished drink has a clear medium heat behind the fruit. Use 1/2 oz of the mix for a milder paloma or 1 oz for a hotter one.

Ingredients

For the Rim

  • 1 tsp kosher salt
  • 1/4 tsp chili powder
  • 1 lime wedge

For the Paloma

To Finish

  • 1 thin grapefruit wedge
  • 1 thin pineapple wedge

Method

  1. Stir the kosher salt and chili powder together on a small plate until the color is even.
  2. Run the lime wedge around half of the rim of a tall glass. Press the damp edge into the chili salt, then fill the glass with ice.
  3. Pour the tequila, grapefruit juice, lime juice and Pineapple Mango Habanero Margarita Mix into a cocktail shaker filled halfway with ice.
  4. Seal the shaker and shake hard for 15 seconds. Stop when the outside is cold and lightly frosted.
  5. Strain the mixture into the prepared glass. Pour the grapefruit soda down the inside of the glass so it keeps most of its fizz.
  6. Stir once from the bottom to bring the drink together without knocking out the bubbles.
  7. Set the grapefruit and pineapple wedges against the rim. Serve while the glass is cold and the soda is lively.

One more thing

For a zero-proof paloma, replace the tequila with 2 oz of chilled sparkling water or a zero-proof agave spirit. Keep the grapefruit soda in the recipe so the finish stays crisp.
